Ingredients
- 1 ounce rum -- dark rum
- 1 ounce ruby port
- 1/2 ounce lemon juice
- 1/2 teaspoon superfine sugar
- 1 egg whites
Collins glass
Instructions:
Shake vimfully with cracked ice in a chilled cocktail shaker, then strain into a chilled small Collins glass and fizz with seltzer water to an inch or so from the top. If you don't have a soda siphon (an entirely pardonable oversight), give the bottle a careful little shake before pouring it in. You want bubbles. As for that egg white: you can leave it out, if you like, without affecting the taste. But it does add a sturdy body to the drink, along with a nice opacity. Plus, there's the protein. (One egg white will do for two drinks.) Oh, and for an Elks' Club Fizz, use rye whiskey instead of rum and garnish with a bit of pineapple.

The Windy City's contribution to mixology. A genteel drink, obviously from the part of town where Frank Lloyd Wright built houses, not the part where roughnecks butchered pigs and put them in cans. That said, the precise origins of this suave deceiver are -- as happens more often than not in the etiology of the cocktail -- frustratingly obscure. It was known (as a Chicago import) at New York's pre-Prohibition Waldorf-Astoria bar, but what good combination wasn't? Beyond that, the handful of turn-of-the-last-century drink books we've been able to muster are silent.
There are Fizzes aplenty, to be sure. Silver, Golden, Morning Glory, Police Gazette, Elks', Electric Current, Green, Sitting Bull, Ramos -- the list goes on. But then again, they needed a lot of 'em. A Fizz, you see, was what a sporting man would moisten the clay with directly upon arising -- an eye-opener, corpse-reviver, fog-cutter, gloom-lifter, what-have-you. A hangover cure. Into the saloon you'd go, the kindly internist behind the bar would manipulate a bottle or two, and zam! There stood the glass, packed with vitamins, proteins, and complex sugars, foaming brightly and aglow with the promise of sweet release. Civilization proceeds, but not always in the right direction.
